Course Description

This two day course provides a general overview of foodborne chemicals, how they are regulated, dietary consumption and human exposure in foods, and how chemical safety and chemical risk assessments are conducted by state, federal and international organizations (USFDA, USDA, USEPA, CDC, California, EFSA, and WHO).

Day 1 -  October 28, 2015

9:00 – 9:15: Course overview

9:15 – 10:15: Federal Statutory Authority –  United States federal legal authority that pertains to the main chemical subject areas

10:15 – 11:15: Net effects assessment 

11:30 – 12:30: Safety/Risk Assessment Paradigm and Methodologies

1:30 – 2:30: Assessing dietary consumption and exposure of chemicals in food

2:30-4:45: Contaminants (natural and industrial)

Day 2 – October 29, 2015

9:00 – 10:00: Pesticides 

10:00 – 11:00: Veterinary drugs 

11:15 – 12:30: Food Additives  

1:30 – 3:00: National Residue Program – managing chemical hazards in FSIS-regulated products

3:15 – 4:15: United States and international risk management options for food borne chemical contaminants
