This is the original flagship course of the JIFSAN food safety risk analysis curriculum. Food Safety Risk Assessment predicts the likelihood of harm resulting from exposure to chemical, microbial and physical agents in the diet. Our 7-week online course introduces the range of risk assessment approaches across a wide spectrum of food safety hazards. This course provides the opportunity for hands-on experience with a wide variety of food safety risk assessment models while working with food safety professionals from around the world.

All food safety risk assessment models make extensive usage of qualitative and quantitative risk assessment tools, techniques and topics. This course introduces and explores some of the more useful topics, tools and techniques used by risk assessors. Joining with food safety professionals from around the world in group exercises you will gain hands-on experience with many of these methods.
